Cheap and good. Dad and I paid another visit to Saigon Village, and noticed that they have put together a separate vegetarian menu. Well in this July heat, we couldn't resist trying it out.
Dad tried the vegetarian vermicelli bowl that had a mixture of seitan and crispy tofu toppings with a veggie spring roll. He said it was perfect.
I ventured to try their Lotus salad, which I imagined had lotus root as part of its ingredients. Ooops. I was wrong. It was fresh finely slivered cabbage of green and purple, with some of that mixture that was on Dad's, except there were larger slices of seitan and crispy tofu in a scattered topping. The light and sweet dressing was refreshing. The prices here are actually cheap, and the staff are friendly, helpful and prompt. What more could we ask?

The long white slivers are lotus root in baby form.
Oh, I'm going to have to try it again and look for them. I'm used to seeing the wagon-wheel looking ones. Thanks!

Glad to be of help. If you look at your picture again, you can see the lotus root (the white tube things). It's in the lower left corner, between the tomato and the cucumber, below what looks like tofu?
They're sometimes sliced diagonally in the salad and you can see the "wagon wheels" that way.
The main reason most people go there is for the Pho noodle bowls. They have a good price for decent Pho in Marin (which lacks to the East and South bay). I find myself there often enough, especially on cooler days.
